Feeling daff???

They're everywhere, it's a yellow invasion!

These perky little flowers started blooming a couple of weeks ago, and never fail to bring a smile to my face. I thought I'd share some with you, a little hump-day eye candy.  If daffs aren't enough to get you through the rest of the week, how about a batch of tropical cookies? They're the ones I mentioned last week, remember? Sorry for the delay...
I picked up this bunch for £1 (that's about 1.60 CAD for two dozen flowers!). 
Coconut Date Cookies

2 Tbsp flax seeds
2 Tbsp water

1 C oat flour (throw the oats into a blender)
¾ C pecan or walnut flour (grinding your own is cheaper than buying nut flour)
½ C unsweetened shredded coconut
½ tsp aluminum-free baking powder
1 ½ tsp cinnamon
1 tsp ginger

½ C chopped nuts
½ C chopped dates (if you want extra-chewy cookies, soak the dates, blend into a paste and mix in when you add the wet ingredients)

¼ C honey
¼ C coconut oil, melted
1/3 C almond or coconut milk

Optional: extra coconut or xylitol for sprinkling on top

First, mix together the flax and warm water in a bowl.

Let that sit while you combine oat flour, nut flour, coconut, baking powder and spices. Stir in the nuts and dates

Then, add the flax mixture, honey, oil and milk to the dry ingredients. Stir until just combined.

Scoop out a tablespoon or two of dough for each cookie. Roll into a ball, flatten, and sprinkle with xylitol or coconut if you'd like.

Bake at 180 (celcius!) for 12-15 minutes.

Cool on a wire rack (if you can wait) and enjoy with your favourite cup of tea (right now I´m in love with Yogi Classic Cinnamon).

  1. At just 1 pound for a bunch of flowers, I'd always have some on my table! And I'll be making this cookie recipe as soon as I get home this weekend.
